Vegetarian Chili Recipe: Easy Potluck Vegetarian Chili by Brandy Summers
This tasty meatless chili recipe is perfect for a potluck lunch.
1 tablespoon vegetable oil1 cup onions, chopped3/4 cup carrots, chopped3 cloves garlic, minced1 cup green bell pepper, chopped1 cup red bell pepper, chopped3/4 cup celery, chopped1 tablespoon chili powder1 1/2 cups fresh mushrooms, chopped1 (28 oz.) can whole peeled tomatoes with liquid, chopped1 (19 oz.) can kidney beans with liquid1 (11 oz.) can whole kernel corn, undrained1 teaspoon ground cumin1 1/2 teaspoons dried oregano1 1/2 teaspoons dried basil
Directions
In a large saucepan heat up the oil over medium heat.
Add onions, carrots and garlic; sauté until vegetables are tender. Stir in the green pepper, red pepper, celery and the chili powder. Cook vegetables for 6 minutes, or until tender.
Stir in the mushrooms and cook for 4 minutes. Stir in the tomatoes, kidney beans, and the corn. Add cumin, oregano and basil. Bring to a boil; reduce heat to medium. Cover and simmer for 20 minutes; stirring occasionally.

1 tablespoon olive oil1/2 medium sized onion, chopped2 bay leaves1 teaspoon ground cumin2 tablespoons dried oregano1 tablespoons salt2 stalks celery, chopped2 green bell peppers, chopped2 jalapeno peppers, chopped3 cloves garlic, chopped2 (4 oz.) cans green chili pepers, drained and chopped2 (12 oz.) packages vegetarian burger crumbles3 (28 oz.) cans whole peeled tomatoes, crushed1/4 cup chili powder1 tablespoon ground black pepper1 (15 oz.) can kidney beans, drained1 (15 oz.) can garbanzo beans, drained1 (15 oz.) can black beans1 (15 oz.) can whole kernel corn
Directions
In a large pot, heat up the olive oil over medium heat.
Stir in the onion, cumin, oregano, bay leaves and salt. Cook until onions are tender. Add in the celery, green bell pepper, jalapeno pepper, garlic and the green chili peppers; heat thoroughly.
Stir in the veggie burger crumbles; reduce heat to low. Cover the pot and simmer for 5 minutes.
Stir in the tomatoes. Add the chili powder and pepper. Mix in the kidney beans, garbanzo beans and black beans. Bring to a boil; reduce heat to low and simmer for 45 minutes.
Add the corn and cook for another 5 minutes.

1 (28 oz.) can diced tomatoes with juice1 small onion, diced1 (15 oz.) can white beans, drained1 (15 oz.) can chili beans, with liquid1 (1.25 oz.) package reduced sodium taco seasoning mix1 (1 oz.) package ranch dressing mix1 (12 oz.) package vegetarian burger crumbles1 (8 oz.) package cheddar cheese, shredded (optional)
Directions
In a large pot, add in the tomatoes, onion, white beans, chili beans, taco seasoning, ranch dressing mix and cook over medium heat. Bring to a boil. Reduce heat to low.
Stir in the veggie burger crumbles and continue cooking until thoroughly heated. Sprinkle cheese on top before serving.
